Pan mee, or ban mian, is one of my all-time favourite dishes—bonus points if the noodles are handmade. One place that seems to tick all the boxes is Prince Noodles, an under-the-radar eatery in Jalan Besar. This noodle joint serves handmade QQ ban mian tossed in an umami-laden chilli sauce, piled high with minced pork, fried anchovies, fried shallots, and various other toppings.

Located a short seven-minute walk from Bendemeer MRT Station, the air-conditioned eatery specialises in KL-style noodles. While most run-of-the-mill ban mian stalls in Singapore source their noodles from external suppliers, the carbs here are handmade to order.
